Sandwiches are the perfect breakfast option. They are easy to make and tastes just awesome. One of my all-time favorite sandwiches is, Open Cheese Pesto with Veggies Sandwich!! Stacked with lots of flavor and textures and it’s nutritious too!!
These sandwiches make a fun snack or appetizer.

This pesto grilled cheese is on my top list always, it’s so good I promise you’ll never look back. So easy to make, plus pretty fresh and healthy!
There is nothing like a little pesto with veggies and cheese to liven up the classic grilled cheese sandwich and take it to the next level. Plus, grilled cheese is a great meal in minutes.
This grilled sandwich is insanely good.
4 bread slices (I took multigrain bread)
2 tbsp pesto (You can check pesto recipe on the blog)
1 tsp butter
1 cup chopped vegetables (I took onions, tomatoes, zucchini and red and green bell pepper)
4 cheese slices
1 tsp chopped garlic
1/2 tsp dried oregano
salt and pepper to taste
1 tbsp fresh basil leaves, chopped
3-4 tbsp processed cheese, grated
Heat the butter in a pan, saute garlic and other vegetables for 2-3 minutes.
Add salt, pepper and dried oregano and mix well. Set aside.
Spread the pesto on one side of a bread slice.
Add the cheese slice on top of pesto and add saute veggies on it.
Now add processed cheese on top of veggies and then add chopped basil.
Grill the sandwich in the preheated oven for 6-8 minutes at 200°C or till the cheese melts.
