Khoya Nariyal Ladoos

On the auspicious occasion of Krishna Janmashtami, I prepared this wholesome, nutritious Khoya Nariyal Ladoos that is loaded with nuts and goodness. And it’s quite easy to make too.

Ingredients:
1 tbsp ghee
1 cup desiccated coconut
1 cup milk
8-10 Kesar strands, soaked in 2 tbsp milk
1 cup khoya
1/4 cup sugar
1/2 tsp cardamom powder
1/2 cup almonds and cashew nuts, finely chopped

Instructions:
In a heavy bottom Kadai, add ghee.
Once the ghee is hot, add desiccated coconut and roast on low to medium heat till it turns slightly brown in colour. Be careful, not to burn it as coconut burns very fast.
Add Kesar milk and 1 cup milk and mix properly and cook for another 4-5 minutes.
Once the milk is reduced a little, add khoya and sugar and mix well.
Add half of the dry fruits and keep half to coat it on the Ladoos.
Cook for another 8-10 minutes, stirring continuously on low to medium heat till the mixture becomes thick like a ball.
Now take out the mixture on a plate and let it cool down a bit.
Then roll the ladoo shape and coat each ladoo with the remaining dry fruits.
You can keep these Ladoos in the refrigerator for 5-7 days.
